This soda bread is wonderful. I made it into muffins instead of the loaf or round pan method. They are moist, arromatic, have a wonderful texture and excellent flavor. When I brought these to our neighborhood St. Patrick\'s Day party, everyone who dared to try the \"gluten free\" bread, preferred it to the regular soda bread. My husband will not eat soda bread, but LOVED this. It is much sweeter than a traditional soda bread and it has fewer raisins. This is the first gluten free item I had ever made that I loved the very first time. (7 years as a Celiac, its nice to finally say that:) I did not have to tweak the recipe, I used veg oil instead of shortening, and used 1% milk, and egg beaters instead of shelled eggs. Two thumbs up!! Will definitely order again. Perfect with jam, butter or just plain.
